Sweet Onion Confit
This brilliant concoction by Virginia Willis is our customers' favorite savory treat. The winner of the 2014 Flavor of Georgia award, we can hardly keep this in stock! We use sweet onions from Georgia for as long as we can find them and then turn to other sweet onions so that we can make this condiment year round. We caramelize them with brown sugar, add vinegar for tart flavor and crunchy mustard seeds for pop. Sweet Onion Confit dances on the tongue and enlivens every food it encounters. If it were a person, it would be the liveliest, most engaging person at a party. But do be warned: once you taste Sweet Onion Confit, you will not be able to do without it.
